eggs, basil and my pretty pot

We will be having stir fry tonight starring…baby bok choy from arkansas’ community supported agriculture program (the basket-a-month).

If you want to have it too, here’s what to do.

Chop a sweet onion into large pieces.

Cook for about 3 minutes in 1 tablespoon hot, toasted sesame oil on medium high heat.

Scoot onions to the side of the skillet and add meat of choice. at our house, that will be tilapia. Brown the meat on each side (2 minutes) and then add 2-4 tablespoons of your preferred stir fry sauce. I use soy vay, but Newman’s Own sesame ginger dressing will work in a pinch.

Stir occasionally until your meat is done (about three more minutes for fish, longer for chicken).

At this point, I add chopped, extra firm tofu and another tablespoon of soy vay, but many people don’t prefer tofu, so you can skip this step if you want.

Lastly, lay the baby bok choy on top (just wash it, don’t chop it up or cut anything off of it), add a little more sauce, cover and let steam for about three minutes. just until it wilts a little bit. Don’t let it get too soggy. You want a little crunch.

Serve your stir fry with yummy Arkansas brown rice…also in the basket this month.  If you did not get a basket this month, you can, of course make this meal with any brown rice and just about any green vegetable. broccoli, green beans, sugar snap peas. also, you can throw a red pepper in with the onion. I make this meal every couple of weeks and vary the vegetables to make it seem new.
